the proof of the pudding

これはthe proof of the pudding is in the eating.（プディングの味は食べてみないとわからない；「論より証拠」）ということわざを短くしたものです。

実際に試さなければ真価はわからないということです。

I've read the proposal and it looks promising, but the proof of the pudding is in the eating.

the salt of the earth

「地の塩」

この表現は、新約聖書、マタイ伝の山上の説教の中で、イエスが弟子たちに、"You are the salt of the earth."（あなたがたは地の塩である）と言っていることに由来しています。

塩が保存力を持つように、社会の腐敗を防ぐような、模範的な人格者になりなさい、ということです。

このことから、このフレーズはa very good anhonest personのことを指します。

We really miss our next door neighbor. She was the salt of the earth.

spill the beans

「豆をこぼす」

比喩的に「秘密を漏らす」ことです。

It was then that she threatened to sill the beans about her affair with the president.

take pot luck

pot luckとは文字通りには「鍋の運」ということですが、鍋にたまたま入っている料理を食べるという発想から、「ありあわせの料理」を指します。

take pot luckで「客が（客用にわざわざ用意された料理ではなく）ありあわせの料理で食事をする」という意味です。

I'm not sure what there is in the fridge - you'll have to take pot luck.

比喩的に「出たとこ勝負でいく、運を天にまかせる」という意味でも使います。

We had no idea which hotel would be best, so we just took pot luck with the first one on the list.

be (as) flat as a pancake

「パンケーキのように平べったい」

比喩的にvery flatということです。

He misses the hills. The land around here is flat as a pancake.
